TOFU MASALA

RECIPES

(for 2 servings)

tofu 400 g
canned chopped tomatoes 240 g (or fresh tomatoes 3 pcs)
cream (I use oatmeal) 0.5 cups
cashews 0.5 cups
turmeric 1/4 tsp
ground coriander 0.5 tsp
Garam Masala 0.5 tsp
bay leaf 1 pc
salt, sugar, ground pepper to taste
cooking oil 2 tbsp
+ fresh grated ginger as desired

Cut tofu into large cubes. Grind cashews in a blender into flour. Heat a pan with a thick bottom. Add oil, spices and fry on low heat for 1 minute. Add chopped tomatoes from a jar (fresh tomatoes need to be cut into small pieces). Stew for 5 minutes. Add tofu, chopped nuts, cream, salt, sugar and pepper. Stir and cook under a closed lid for 10 minutes.
