60 g oat flour
70 g almond flour
100 g rice flour
2 tsp baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 tsp ground nutmeg
100 g sugar
2 bananas
2 tablespoons coconut oil, melted
60 ml plant milk
lemon zest 2 tablespoons
thyme 0.5 tsp (optional)
blueberries 0.5 cups

Mash bananas in mashed potatoes. Add milk, oil, zest, thyme and stir. Mix dry ingredients, add to liquid and stir. Add berries and mix gently. Place in a muffin pan and bake for 35 minutes at 180C. Cool completely before cutting.
