GINGER COOKIES

oatmeal 100 g
gluten-free flour 50 g (you can use wheat or rice flour)
almonds 50 g
raisins 70 g
peeled apple 85 g
vegetable oil 20 g
cocoa 2 tsp
water 2-3 tbsp.
baking powder 1 tsp
dried ginger, ground cinnamon 1 tsp
ground cardamom, nutmeg, black pepper 1/4 tsp

Grind oatmeal and nuts, cut the apple into pieces. Combine apple, raisins, water, add oil, blend everything until smooth. Combine dry ingredients in a bowl. Mix everything well. Then add the liquid part, knead the dough. If the dough sticks to your hands, add flour. We put the resulting dough in the refrigerator for 30 minutes. After 30 minutes, roll out the dough 3-5 mm thick and cut out the cookies using molds. We spread it on a baking sheet covered with parchment paper and put it in an oven preheated to 180C for 10-15 minutes.
