wheat flour 250 g
soda 0.5 tsp
baking powder 1 tsp
ground cinnamon 1 tsp
nutmeg 0.5 tsp
dried ginger 1 tsp
ground cloves 0.5 tsp
sugar 120 g
orange zest 2 tsp
aquafaba 90 ml (liquid from canned chickpeas or beans)
vegetable oil 80 ml
water 120 ml
strong coffee or orange juice 80 ml
liquid sweetener 90 ml (molasses, honey, agave, maple, etc.)

Mix dry ingredients, beat aquafaba until foam (2-3 minutes). mix liquid ingredients and add to dry mixture. Mix well with a whisk. Add whipped aquafaba, mix well. Pour into a loafcake form. Bake at 180C for 55-60 minutes.
