CASSEROLE WITH ZUCHINI AND TOFU

firmed tofu 100 g
silken tofu 320 g
zucchini 300 g
cornstarch 4 tsp
water or plant milk without sugar 50 ml
nutritional yeast 3 tbsp
dijon mustard 2 tsp
oregano 1 tsp
thyme 1 tsp
a pinch of turmeric for color
salt, pepper to taste

Beat silken tofu, water, starch, nutritional yeast, mustard, spices and salt with a blender (you get “sour cream”). Grate zucchini and squeeze out the juice. Mash firmed tofu with a fork (it turns out like cottage cheese). Mix. Add to "sour cream". Stir, place in a baking dish (casserole height 2-4 cm). If desired, sprinkle with grated cheese, oregano/thyme on top. Bake at 180C for 30-40 minutes.
