BLUEBERRY BUND CAKE

wheat flour 160 g
brown or coconut sugar 150 g (or 120 g white sugar)
water or vegetable milk or orange juice 200 ml
baking soda 3/4 tsp
apple cider vinegar 1 tablespoon
vegetable oil 5 tablespoons
3/4 cup blueberries
zest of one orange

Combine dry ingredients in a bowl. In another bowl, combine liquid ingredients and zest. Add liquid to the dry mixture, mix. Add blueberries and stir lightly (you don't need much, otherwise the berries will color the dough). Pour the dough into a mold and bake at 180C for 45 minutes. Cool for 10 minutes and remove from the mold.
