GREEN BUCKWHEAT MUFFINS

80 g coconut flakes
180 g green buckwheat soaked overnight (about 100 g dry)
100 ml plant milk or orange juice
25 ml vegetable oil
60 g coconut sugar
1 tsp baking powder
2 tsp orange peel
1 tsp cinnamon

Beat the buckwheat with a blender in puree. Mix dry ingredients. Mix all ingredients. Put the dough in muffin tins, bake at 180C for 30 minutes. The time depends on the height of the muffins.
